My last show was about how Mexican food has become more authentic in America. The vast variety of styles that comprise Chinese food has also become more authentic and pervasive in America as well. You will find a Chinese food restaurant in every corner of the country, and even the smallest towns.

America's introduction to Chinese food was very Americanized adaptation of Cantonese dishes. I will be discussing the history of Chinese food in America, and how the various regions of China differ not only in ingredients, but also styles of cooking. Of course, no discussion would be complete without sharing some of these recipes.
