August 10,  2016 at 2:00 pm    EXPOSITION with Valerie Thomas and Mike Thompson features Tracy Polcyn with the Tracy French Polcyn Studio.  While decorative cakes really hit the scene in the 17th century, a man named Dewey Wilton in Chicago in 1929 gave us a new, tried and tested cake decorating method.  What is now referred to as the Wilton Method is taught nationwide.  Tracy French Polcyn is a trained and certified Wilton Method instructor who has experience in cake decorating and instructing in the mediums of buttercream, fondant, and royal icings.  Courses teach icing techniques to cover cakes, as well as a vast variety of flowers such as the calla lilly, rose, daisy, mum, and many more.  She has experience making and decorating cookies, special occasion cakes, and wedding cakes.  Currently, she teaches courses at The Artisan Shoppe located in Gallipolis, Ohio.
