Alice Waters and Organic Gardening

The organic food concept is in the midst of a revolution.  The legendary Alice Waters pushed for an organic garden at the White House and got it, and the idea has taken root in the public schools across the U.S.   “She has done more to change how we Americans eat, cook and think about food than anyone since Julia Child … It is a movement that preaches about fresh food grown in a way that’s good for the environment,” and gives a boost to local farms to boot!  Quote from CBS News.

Salad Recipes with Arugula

Noreen Brown’s  “Arugula Salad with Citrus Vinaigrette”:  [Ingredients - 1/3 cup grapefruit juice, 1/3 cup of orange juice, 1/3 cup extra virgin olive oil, 6 ounces of arugula, rinsed, dried and torn, 1 pear, cored and sliced, and 1 red bell pepper thinly sliced, salt to taste]. Combine juices, olive oil and salt in a jar with a tight-fitting lid. Combine arugula, pear and red pepper in a bowl. Drizzle dressing over salad, and toss to coat.
