Noreen Brown’s “Arugula Salad with Citrus Vinaigrette”: [Ingredients - 1/3 cup grapefruit juice, 1/3 cup of orange juice, 1/3 cup extra virgin olive oil, 6 ounces of arugula, rinsed, dried and torn, 1 pear, cored and sliced, and 1 red bell pepper thinly sliced, salt to taste]. Combine juices, olive oil and salt in a jar with a tight-fitting lid. Combine arugula, pear and red pepper in a bowl. Drizzle dressing over salad, and toss to coat.
