It's Friday, and that means that Hammer & Ellen J are cookin again, with Chef Cherise!!! We're going Jamaican, Mon for this dish...Jerk Chicken!!! If you would like to join us live in the studio, the number is 319-527-6099.

Jerk Chicken Servings: 4 Calories: 220 Ingredients: 1 Large Yellow onion finely chopped 1 Red Pepper finely chopped 1 Green bell pepper finely chopped 4 Scotch bonnet peppers finely chopped (this is maximum hot. Adjust for milder) you can even use 2 ghost chilies. But please use goggles and gloves when cutting these. 8 garlic cloves finely chopped 1 bush green onion finely chopped (scallions) 1 Tablespoon salt 1 Tablespoon ground black pepper 2 Tablespoons Allspice 1 Tablespoon Nutmeg 1 Tablespoon sugar. 1 pack of Fryer cut up chicken Mince all of vegetables and place them in a large bowl mix the allspice, nutmeg, sugar, salt, onions, peppers, scallions, garlic, and black pepper add the chicken and make sure the chicken is coated. Cover, refrigerate and let sit for 12 hours. Now that it is 12 hours later, let’s take that chicken out. Let it sit out for half an hour. Fire up the grill. Make sure that the coals are really hot. Place the chicken on the grill turning often so it does not burn. Cook thoroughly. Remove and serve. To lessen the heat, you can coat the chicken in barbeque sauce
