The American understanding of Mexican food has undergone a change since the 1960's. From the Americanized frozen TV dinner and fast food to the current growing trend in local, sustainable Baja-Med cuisine. Just like there are regional differences in American BBQ, or cuisine in various regions of Italy or China, there are differences in the various regions of Mexico. In today's show, I'll be talking about some of those differences.
