Katie was diagnoses with Juvenile Rheumatoid Arthritis at 4 years old, causing her to spend her childhood in chronic pain. It was frustrating for her, but it made her push herself to accomplish things that were pain-free for her and easy for her friends. Although it didn't stop her from growing up as a dancer, until 2004 when she was 24 years old.  She was then diagnosed with Ankylosing Spondylitis.  She soon lost the ability to look up and the majority of the range of motion necessary to turn side to side. Losing the ability to tie her own shoe laces without a great deal of pain caused her to vow she was going to find a way to slow the progression of those debilitating diseases.

 

Through her research of holistic and alternative medicines she discovered how certain herbs and spices, since ancient times, had been used medicinally to cure disease and other ailments. She learned to cook using herbs and spices, adding interesting and exotic flavors to dishes without adding fat and calories. She soon realized her body was in even less pain than when she just avoided certain ingredients.

 

Her recipe book: "Feeding Our Families" teaches how foods are seasonal for a reason. She explored other cultures and cuisines to learn why different parts of the world eat the way they do. After each recipe she explains why she chose every ingredient used so you will understand exactly how food heals and why certain ingredients are so important.
