When Nikki Everett’s twelve-year-old daughter, Erin, was diagnosed with celiac disease in 2008, she had never heard of celiac disease. From there, what first was a problem, turned into a passion.

In 2009, Everett chartered the Charlotte chapter of Raising Our Celiac Kids, or R.O.C.K., so area kids could gather for dances, parties and outings to gluten-friendly restaurants. She also started a blog that offers resources on gluten-free living and a web site with tips and recipes.

But she didn’t stop there, in 2010 she launched the Gluten/Allergen-Free Wellness Event which presented nationally acclaimed celiac disease researchers, experts, vendors and chefs from around the country. The event has since spread to nine cities in 2014.
