Tired of potato chips and looking for a better snack? Look no further than Keenwa Krunch, containing 100% organic quinoa crisps and flakes, a good source of fiber and 4 flavors: Walnut Date Agave, Vanilla Almond Raisin, Cinnamon Banana Strawberry, and Coconut Cranberry Cashews. Quinoa, gram for gram, is considered one of the most nutritious plant foods on Earth. Originating from the ancient Andean region of South America, quinoa was revered by the Inca and was a staple food in their diet. Fast-forward to the present, and quinoa is a popular super food in the US. Blake Niemann became a fan of quinoa while in college and noticed how energized he felt while eating quinoa on a daily basis. He decided to create a quinoa snack that he could take anywhere. After significant research, eatKeenwa Krunch was launched in 2013, and their first big break came from Whole Foods. I had the opportunity to meet Blake Niemann at the Fancy Food Show in NY this past June. This is the last of a three part series on food entrepreneurs. “What do you need to start a business? Three simple things: know your product better than anyone, know your customer, and have a burning desire to succeed,” said Dave Thomas, Founder of Wendy’s. An entrepreneur is someone who sees an opportunity, sizes up its value, and finds the resources to make it work. Entrepreneurs are typically innovators introducing something new to the marketplace, putting a different spin on a product or a process – and willing to take a risk for their success. Find out from Blake Niemann what it took to launch an innovative new snack food. After the interview, check out After Hours at Jersey Coastal Live for more information.

If you thought cranberries were just a holiday side dish in jellied-sauce form, you never met Mike Cohen. For the L.A. chef snagged top honors in Ocean Spray’s Ultimate Cranberry Recipe Contest with a delictible conconction that’s meant to be served up well after the turkey’s been picked to the bone and mashed-potato bowl licked clean. “My recipe’s a dessert quesadilla,” he tells In the Kitchen host Jackie Plant. “You roast some cranberries up with cinnamon, orange zest and brown sugar. Then you spread some cream cheese on it like a tortilla. Then you put the cranberries in, put it on a griddle with some butter, top it with a little maple syrup and vanilla ice cream, and you’re good to go.”
