Chef Cherise's WTF Tuna, Wild Rice & Asparagus

Servings 3

Calories 550

Ingredients:

3 Ahi Tuna steaks

1 bushel of Asparagus

2 cups Wild Rice

4 cups Chicken or vegetable stock

½ Onion minced

15 garlic cloves minced divided into 1/2

½ carrot cut into small cubes

½ cup Flour

1 tablespoon corn starch

2 cups Vegetable oil

Salt and Pepper to taste

Directions:

Cut the asparagus spears in half. Place in a bowl add enough oil to coat it. Add half of the garlic and season with salt and pepper. Mix and allow to marinate for an hour. Lay the tuna in a pan and season both sides with salt and pepper. Allow it to marinate.

In a pan with a lid, heat up some oil on a medium flame. Add the onions and carrots and allow to cook until soft. Add the rice and stir, cook for 1-minutes stirring constantly. Add the garlic and stir for 1 minute. Add the chicken stock and stir. Season it with the salt and pepper. Turn the fire on low and allow to cook until soft.

In a frying pan Heat 1 cup of oil over a medium heat. Mix the flour and cornstarch in a bowl and season with salt and pepper. Remove the asparagus and coat with the flour mixture. Place them in the pan and allow to brown on all sides. Once done, remove them and place on a paper towel on a plate. In the same pan add the Tuna and allow to brown on both sides. Repeat until all of them are done. Plate and Enjoy!
