From Criminal Law to Zydeco Bars: Meet Michelle Vallot

In Celebration of Women's History Month This Woman's Words welcomes Louisiana based Criminal Law Attorney - Michelle Vallot.  Michelle developed the great tasting, nutritious sweet potato based Zydeco Bars. 

As a practicing lawyer, Michelle worked for the Louisiana House of Representatives, and for  the Office of the Federal Public Defender for the Middle and Western Districts of Louisiana where she worked as a criminal defense staff attorney from 1996 until 2011.

While practicing law, she combined her entrepreneurial talents and her interest in health and nutrition by creating recipes for a wide range of cookies, and nutrition bars. Her work in this area led to the founding of Zydeco Foods, LLC and, ultimately the creation and retail roll-out of the Zydeco Nutrition Bar, with distribution first locally, regionally and now, nationally in numerous markets ranging from small retail to the supermarket channel.
