Elena Torsiello’s ultimate goal is to promote public awareness of Celiac disease. Each day, she strives to help Celiacs avoid the years of suffering that she endured. Sheis an elementary English As A Second Language teacher in Willingboro, New Jersey and resides in East Windsor (NJ) with her husband, James, who doubles as her personal chef, cooking gluten and dairy free due to her diagnosis of Celiac Disease at the age of 40.
