Professor Dessislava Dimotrova from the University of Sophia Bulgaria joins the program to give a detailed perspective on the ESSEDRA project in the Balkans. A joint venture with Slow Food, the United Nations Food and Agriculture Organization and the European Union, ESSEDRA aims to help document fast disappearing foodways and traditions from the Balkans.
