Adding some Indian dishes to your repertoire will provide you with some bold flavor options for your meatless menus. These meatless dishes will appeal to vegetarians and non-vegetarians,who want a variety of flavors and textures, while still being very budget-friendly. I've broken up Indian cuisine into 6 regional types: Bengali, Jewish Calcutta, Anglo Eurasian Christians of Calcutta, Parsi (Persian) Zoroastrians, Hindu & Muslim Kashmiri, and the Tibetan Buddhists of Darjeeling.

Indian cuisine includes an array of exotic spices and vegetables for ingredients, so I will be spending a bit of time describing and giving tips on the preparation of these items, including where they can be found.
