Could you have a greater result from your training by not touching cash register receipts? True.  Could you perform at a higher level both mentally and physically by eating processed foods? False.

Any why do we care, when we are talking about the central nervous system and improving athletic performance.

Answer: If you don't take care of the foundational parts of your central nervous system, it will not work with the efficiency that it was created.   The work capacity you are looking to build and the time you put into improving at sport will be futile and useless because your body will break down eventually.  There have been numerous prominent doctors talking about the affects of the food, air and water on the central nervous system, more specifically the brain, of young people and ultimately, their performance in sport.
