Today Laura Theodore, the Jazzy Vegetarian welcomes Jennifer Suhr, to talk about some tips for adding more plant-based meals into your weekly menu plan. Jennifer Suhr, RN, BSN, MBA has a passion for good food and good health. She became vegetarian 16 years ago and began researching the benefits of a vegetarian diet, and the correlation between peoples’ eating habits, environments, and disease. Pursuing a career in health, she attended nursing school and worked in a large metro hospital but soon realized that conventional medicine was not the right fit. She believed in a natural holistic approach to health and wellness.

Jennifer and her husband had two daughters who were born blind because of a rare genetic disorder. She resigned from her job at the hospital and looked for a way to uplift humanity’s consciousness of health from home where she could care for her children at the same time. In 2011, she created HappyHealthyVegetarian.com, a vegetarian meal planning website to educate, inspire, and ease the burden of meal planning for vegetarians. NEWSFLASH: Season 2 of Jazzy Vegetarian launches nationally via public television stations starting July 1, 2012 (check your local listings) and features 13 half-hour episodes serving up mouthwatering, vegan menus for anybody looking for delicious, nutritious food. Each show features Dr. Pam Popper of Forks Over Knives! From  “Rockin’ Moroccan Stew” to “Chocolate Mousse Ginger Pie,” this season ROCKS!
