    Professor Dessislava Dimotrova from the University of Sophia Bulgaria joins the program to give a detailed perspective on the ESSEDRA project in the Balkans. A joint venture with Slow Food, the United Nations Food and Agriculture Organization and the European Union, ESSEDRA aims to help document fast disappearing foodways and traditions from the Balkans. Dr. Dimotrova brings fresh insights on why this project is so important, and a model for the rest of the world when it comes to fostering international cooperation for sustainable rural development.
