    Laura Theodore loves ringing in the New Year with the “c” word—coco! “I want to share with you my favorite New Year’s Eve dessert. It’s a wonderful chocolate peau de crème. And it’s my version of my grandmother’s 60-year old recipe. Hers had eggs and cream, but mine is of course vegan,” says the host of the PBS cooking show The Jazzy Vegetarian and its companion BlogTalkRadio series. “Here’s what you’ll need: Three-quarters of a block of softened tofu, two teaspoons of organic brown sugar or maple sugar, one cup of organic dairy-free dark chocolate chips, and three-quarters of a cup of soy milk. When it’s done, pour the pudding in espresso cups. Then refridgerate it for at least four hours and serve.”

    Laura Theodore loves Thanksgiving—except for the turkley part! “Starting off with a great vegetarian stuffing makes a great base for a spectacular turkey-less meal. It’s my easy savory walnut mushroom stuffing,” says the host of the PBS cooking show The Jazzy Vegetarian and its companion BlogTalkRadio series. “Start off with seven slices of whole-grain bread. I like to use the sprouted variety.  Then one teaspoon of Italian herbs, a half-teaspoon of sea salt, two and a quarter cups of diced baby bella mushrooms, one teaspoon of tamari, one medium chopped onion, two diced celery stalks, one to two tablespoons of olive oil, one cup of finely chopped walnuts, a half-cup of vegan margarine, half a cup of water, and one vegetable boullion cube. This makes a delightfully crispy stuffing that can be used to stuff acorn squash or portabello mushrooms or even small pumpkins. It makes an excellent Thanksgiving entrée.”

Gene Baur has a new book, Living the Farm Sanctuary Life: The Ultimate Guide to Eating Mindfully, Living Longer, and Feeling Better Every Day, that will be released on April 7, 2015, and is currently available for preorder online.


    Gene has been hailed as “the conscience of the food movement” by TIME magazine.  For 25 years he has traveled extensively, campaigning to raise awareness about the abuses of industrialized factory farming and our cheap food system.  His book, entitled Farm Sanctuary: Changing Hearts and Minds About Animals and Food, was published by Touchstone in March 2008 and has appeared on the Los Angeles Times and The Boston Globe best-seller lists.

    A Conversation With Laura Hayden

    When Laura Hayden is not killing patients–with laughter, she is killing it on stage as a stand-up comedian and inspirational speaker. Dr. Laura Hayden is a practicing physical therapist, touring comedian and speaker. Laura’s stand-up career started at the front of the classroom while she earned her Masters in Physical Therapy from Mount Saint Mary’s College. Her ability to highlight the humorous side of medicine led her classmates to nominate her to give their graduation commencement speech. To this day the faculty at Mount Saint Mary’s College still talk about that “infamous” commencement speech. Laura credits this as her first stand up performance.


    The impact of Laura’s humor on her patients and classmates and her personal struggle with caretaker burnout led Laura to research the correlation of laughter on overall health—especially how it affects those charged with taking care of the sick and injured.  Laura’s personal journey and research on the healing aspect of laughter led her to pursue her PhD in Physical Therapy from Boston University. The emphasis of her PhD was burnout and therapeutic laugher. Caregiver burnout is a serious issue in the medical industry and as a caregiver herself she understood how difficult it was to stay sane and positive when dealing with the stress. She found that laughter truly is the best medicine for patients, their loved ones, and the medical professionals working the front lines.


    Today Laura lends her humorous take on the absurd, bizarre and rare moments that make living and healing such a great part of the human experience. Part of her mission to serve others, educate and entertain  with kindness and humor, Laura crafts one-of-a-kind speeches and uplifting presentations that helps people cut loose and find the funny side of any situation. The prognosis . . .terminal laughter!
