    Laura Theodore loves ringing in the New Year with the “c” word—coco! “I want to share with you my favorite New Year’s Eve dessert. It’s a wonderful chocolate peau de crème. And it’s my version of my grandmother’s 60-year old recipe. Hers had eggs and cream, but mine is of course vegan,” says the host of the PBS cooking show The Jazzy Vegetarian and its companion BlogTalkRadio series. “Here’s what you’ll need: Three-quarters of a block of softened tofu, two teaspoons of organic brown sugar or maple sugar, one cup of organic dairy-free dark chocolate chips, and three-quarters of a cup of soy milk. When it’s done, pour the pudding in espresso cups. Then refridgerate it for at least four hours and serve.”

    Laura Theodore loves Thanksgiving—except for the turkley part! “Starting off with a great vegetarian stuffing makes a great base for a spectacular turkey-less meal. It’s my easy savory walnut mushroom stuffing,” says the host of the PBS cooking show The Jazzy Vegetarian and its companion BlogTalkRadio series. “Start off with seven slices of whole-grain bread. I like to use the sprouted variety.  Then one teaspoon of Italian herbs, a half-teaspoon of sea salt, two and a quarter cups of diced baby bella mushrooms, one teaspoon of tamari, one medium chopped onion, two diced celery stalks, one to two tablespoons of olive oil, one cup of finely chopped walnuts, a half-cup of vegan margarine, half a cup of water, and one vegetable boullion cube. This makes a delightfully crispy stuffing that can be used to stuff acorn squash or portabello mushrooms or even small pumpkins. It makes an excellent Thanksgiving entrée.”

    ABOUT GLEN MERZER:  Glen began his career in book-writing as co-author, with Howard Lyman, of Mad Cowboy (Scribner, 1998) and No More Bull! (Scribner, 2005).  Merzer is also co-author of Unprocessed (2011), by Chef AJ; Food over Medicine (BenBella Books, 2013), with Pam Popper; and Better Than Vegan (BenBella Books, 2013), with Chef Del Sroufe. Merzer has had dozens of productions of his plays staged throughout the country, including two productions that toured to the John F.     Karen Page and Andrew Dornenburg are the two-time James Beard Award-winning co-authors of numerous bestselling books, including THE FLAVOR BIBLE, WHAT TO DRINK WITH WHAT YOU EAT, CULINARY ARTISTRY, and BECOMING A CHEF.  For their latest book THE VEGETARIAN FLAVOR BIBLE, the married couple shook things up:  They switched to a plant-strong diet in May 2012, and Andrew took on the book's four-color photography while Karen handled the research and writing.  A graduate of Northwestern and Harvard, Karen earned a 2013 Certificate in Plant-Based Nutrition from Cornell in conjunction with the T.
