I've broken up Indian cuisine into 6 regional types: Bengali, Jewish Calcutta, Anglo Eurasian Christians of Calcutta, Parsi (Persian) Zoroastrians, Hindu & Muslim Kashmiri, and the Tibetan Buddhists of Darjeeling.


    Indian cuisine includes an array of exotic spices and vegetables for ingredients, so I will be spending a bit of time describing and giving tips on the preparation of these items, including where they can be found.
