    Cream Cheese Banana Walnut Bread

    I'd wanted to share recipes and food conversations on the air, but there just hasn't been the time or circumstance to engage in that. So I thought I'd blog you some recipes from time to time, and here's one of my very favorites. I've made it many times over the years, but haven't recently, and got a sudden craving for it the other day. I still haven't gotten around to it, but soon!

    If you do use this recipe, I'd love to hear what you think (taste), and if you have any suggestions or feedback, please feel free to let me know. Food's no fun unless you share it!

    I have been looking for some Indian food recipes. I love the cuisine, but have moved to a place where it just doesn't exist. Any suggestions for

    Although this is "my" recipe, I can hardly claim I didn't gather together the pieces of other people's delicious creations somewhere along the way. That idea always seemed a bit inane to me. So kudos to the many cooks, I'm sure, who brought this delicious one together and landed it right into my vicarious lap.



    Cream Cheese Banana Walnut Bread


    Recipe makes 2 loaves. I hardly think it's worth it to do all the work without having an extra loaf around, and it tastes really good the days following the bake.


    Ingredients

    3/4 cup butter, softened
    (8-ounce) package cream cheese, soft
    1 1/2 cups sugar (friends have made this using more, but I don't like a very sweet banana bread..use your own personal taste judgment)
    large eggs
    cups all-purpose flour (I use unbleached, but that's up to you)
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 1/2 cups mashed bananas (that's about 4 medium)
    cup chopped walnuts (although I usually throw in more...I'm a walnut lover)
    1/2 teaspoon vanilla extract

    Beat butter and cream cheese together either manually or with an electric mixer until it's very creamy. Gradually add the sugar, and beat it until it's light and fluffy.
     
    Add eggs, 1 at a time, beating just until blended. Go easy.


    Combine flour, bp and bs; slowly add to butter mixture, beating a just until blended.

    Stir in bananas, walnuts, and vanilla.

    Spoon batter into 2 greased and floured 8- x 4-inch loafpans.


    Bake at 350° for 1 hour or until a wooden pick (or a knife...) inserted in center comes out clean and sides pull away from the pan. If you notice too much browning going on, cover with aluminum very loosely for the last 15 minutes or so. It depends on your oven. 

    Cool breads (in pans) for about 10 minutes. Remove from the pans, and cool another 30 minutes before slicing.


    Here's a variation, a topping, if you're up for it and in the mood. It's delicious!

    Prepare batter same as above, and into the pans.

    Stir together 1/2 cup firmly packed brown sugar, 1/2 cup chopped, toasted walnuts,
    1 tablespoon flour; 1 tablespoon melted butter, and 1/8 teaspoon ground cinnamon.
     
    Sprinkle mixture evenly over batter. Bake and cool same as above.

    Women's History Month

    March is Women's History Month, and the Library of Congress has developed a new website to celebrate it, sharing the very extensive resources available in their collections on women's history and culture.

    The Library is the oldest federal cultural institution and the biggest library in the world, and they've been gathering the stories of women for over 200 years. The building itself holds images of women everywhere, among them the Great Wall mosaic of Minerva, Goddess of Wisdom and Learning.

    The theme of this year's History month is Women's Art: Women's Vision. The Library of Congress provides us with learning resources from every arena - web connections, articles, audio, film, photographs...the list goes on. They've done a brilliant job of bringing together a spectacular gallery of information and learning. 

    I've visited the site many times, and still there's so much new I haven't yet seen. It's a place you'll need to revisit over and over again, but the experience is rich, exciting and inspiring.
     
    Scholars, parents, educators, women, men, writers, artists, musicians, historians, students, working people, professionals...whoever you are, you'll be delighted.

    The Real Dubois(es)

    One of the things I love the most about the TV show Medium is the relationship between Joe and Allison Dubois. In the midst of their sleepless nights and stressful lives, they maintain a relationship that is loving and caring. They're both very independent but utterly committed, to each other and to their girls, and the writers do a great job of creating a feeling of the everyday mundane in the midst of relentless almost-daily paranormal interference.

    I'm not sure how many of you know this (I imagine most who watch the show do know), but Allison is based on a "real" person, and you can read all about her and what she's doing on
    her website!

    Husband Joe is also a "real" person and is, in fact, an aerospace engineer just like his buddy on the show. He maintains a blog, and you can take a peek at his and him at

    I wonder if he's also unemployed.

    Encyclopedia of Life


    On our most recent show, I mentioned the Encyclopedia of Life. What an awesome effort, the first release of a website portal to document all species of life on earth!

    "EOL is an unprecedented global effort...  Natural history museums, botanical gardens, other research institutions, and dedicated individuals are working to create the most complete biodiversity database on the web..."

    "...an ecosystem of websites that makes all key information about all life on Earth accessible to anyone, anywhere in the world."

    First release or not, the website is an amazing accomplishment. There certainly should be no problem navigating the site, and they provide a video tour and lots of explanation to get you started...

    My first wander landed me on the page of the "anole," a little creature I've always loved and  been fascinated with. I was taken to photos, classifications, and all the information I could possibly need or want.

    Books We've Recommended

    I'm playing catch-up here so please forgive me.

    Last month we talked about two wonderful books and here are the details:

    "A Natural History of North American Trees" by Donald Culross Peattie. A beautifully written history book that takes you on a visual journey through the forest of North America. Peattie gives tree identification new meaning as he emotionally connects you to the woods.


    "How to Protect Your Children on the Internet" by Gregory S. Smith. The subtitle is A Road Map for Parents and Teachers and it does take you on a journey through the internet and, more importantly, how children use it. This insight will help parents and teachers locate the danger zones and learn how to protect their families and students.

    Check them out at your local library.
