It’s hard to overstate the impact that cardiovascular disease (CVD) has in the U.S.. Consider the following:
Cardiovascular disease affects 65 million Americans.
Close to one million Americans have a heart attack each year.
In the U.S., one person dies every 39 seconds of cardiovascular disease.
1 of 3 deaths that occurs in the U.S. is caused by cardiovascular disease.
1 in 3 Americans have metabolic syndrome, a cluster of major cardiovascular risk factors related to overweight/obesity and insulin resistance.
The total cost of cardiovascular disease in 2008 was estimated at $300 billion.
To put that last statistic in perspective, the World Health Organization has estimated that ending world hunger would cost approximately $195 billion. One might argue that the $300 billion we spend on treating cardiovascular disease in the U.S. is a necessary expenditure; however, a recent study which looked at the relationship between heart disease and lifestyle suggested that 90% of CVD is caused by modifiable diet and lifestyle factors. Unfortunately, cardiovascular disease is one of the most misdiagnosed and mistreated conditions in medicine. We’ve learned a tremendous amount about what causes heart disease over the past decade, but the medical establishment is still operating on outdated science from 40-50 years ago.

I recently read a very interesting article by Marianne Kirby on xoJane called, "I'VE ONLY GOT 1 THING TO SAY TO FOLKS WHO DON'T UNDERSTAND FAT ACCEPTANCE," which was a response article to Carolyn Hall's "6 THINGS I DON'T UNDERSTAND ABOUT THE FAT ACCEPTANCE MOVEMENT." The article has almost 600 comments - which are incredibly interesting, provocative and informative all at the same time.
As a former morbidly-obese woman (311+ lbs), I am incredibly sensitive to the bias and stigma against overweight people. However, I struggle with the terms and ideaologies that are core to the Fat Acceptance movement.
Today's discussion will feature my good friend and author of Powerful Hunger, Dagny Kight.
In this episode Big and Beefy will be Chewing The Fat with North Dakota University Professor of Pork David Newman. Newman also owns Newman Farm Heritage Berkshire Pork.

Beats and Eats Two
On this episode of Chewing The Fat with Big & Beefy , Chef Rob Burmeister and Chef Clemenza Caserta Jr. welcome Chef Kashia Zollicoffer from Hell's Kitchen Season 12. The chefs want to know about her Hellish time in Chef Gordon Ramsey's Kitchen. If we are lucky maybe some of Kashia's castmates will call into the show to Chew The Fat.

In this episode of Chewing The Fat with Big & Beefy , Chef Rob Burmeister and Chef Clemenza Caserta Jr. will be welcoming a special guest who's main goal in life is to end childhood obesity. He is the founder of a great organization called "Hip4Kids". Chef Chris Daly will be calling in to talk about his projects and great healthy products including the delicious "Chocolate HIP Cookie. Trust me when I say it is one of the best cookies I have ever eaten (quoted by Big). It is The Healthiest Cookie In The World as seen on The Rachael Ray Show. Chef Rob has helped out in Chef Chris' cause doing demos in schools to teach kids how to eat healthier.
Also on the bill will be a drop by to the studio by a local tavern owner (hopefully) and also Big & Beefy's Top Five which I believe will be A Healthy One ( FOR A CHANGE). Join in on the FOOD FIGHT and check out our weekly FOOD NEWS.
