    This week Jules hosts newly crowned Mrs. United States! Shannon Ford happens to also have celiac disease and be an outstanding champion of 1in133.org and an advocate for gluten-free food labeling laws in the United States.
    Shannon was crowned on August 4 in Las Vegas, on the 25th anniversary of the Mrs. USA pageant. Her platform throughout her year is “1 in 133 – Raising Awareness for Celiac Disease”. It is her goal to bring more attention to celiac disease and to advocate for better labeling of our nation’s food supply.

    Andrea Levario joins Jules on the Gluten-Free Voice

    This week Jules will be joined by Andrea Levario, the Executive Director of the American Celiac Disease Alliance (ACDA). Under Ms. Levario’s leadership, the ACDA has fought for many policy initiatives on behalf of those with celiac disease. Most recently, the independent organization 1in133.org selected the ACDA as its partner group to push for finalization of FDA gluten-free food labeling standards. Together, they have achieved this goal, with the FDA’s release Wednesday of its Safety Assessment, just 3 months after 1in133’s Gluten-Free Labeling Summit.
    Ms. Levario will be on with Jules to discuss what happens next with these proposed regulations and how the gluten-free community can best respond to the FDA’s proposed standard so we may all enjoy safer gluten-free labeling in the United States as soon as possible.

    Chef Aaron Flores -The Gluten Free Voice with Jules Shepard

    This week Jules is joined by Chef Aaron Flores, a pioneer in safe gluten-free dining. Chef Flores spent twelve years with The Walt Disney Company in hotels such as the Disneyland Hotel, Disney’s Pacific Hotel and finally as Opening Sous Chef for the Five Diamond Disney Grand Californian Hotel. He has since worked with hotel restaurant groups around the country, ushering in safe gluten-free dining practices everywhere he has gone.   Chef Flores has worked with both the Celiac Sprue Association and the Gluten Intolerance Group of North America as a chef demonstrator and as their executive banquet chef for national conferences. He is currently the Executive Chef at the Embassy Suites Convention Center in Washington, DC, the site of the 1in133.org "World's Tallest Gluten-Free Cake." Chef Aaron was part of the team who built this cake to pressure the FDA to set gluten-free food labeling standards.
