Chef Eval Mallet of Black Trumpet Bistro in Portsmouth New Hampshire is an example of art meeting sustainable cuisine. Through his work with the Chefs Collaborative, The Heirloom Harvest Progect and Slow Food Seacoast, Mallet is working to make dining out a form of edible education to help preserve local sea food and show that eating sustainably is actually quite delicious.
