When you think of jerky, you think of dried meat that wears out your jaw trying to chew it, right? And it's mostly men who eat it.  Well, not in Asia.  It's a common snack there, like chips are here.  But it's not jerky as we know it.  It's more moist, easier to chew, and the flavors are different.

When KaiYen Mai took over the family jerky business, she decided to expand the market. So, she started Fusion Jerky to appeal to Americans.  She started making turkey and chicken jerky for those who don't eat red meat.  She left out all additives, cut the sodium way down, and came up with flavors non-Asian Americans would like.  Lemon Pepper chicken jerky.  Chipotle Lime beef.  Island Teriyaki pork.  This is a whole new world for jerky.
