What’s on your Thanksgiving table this year? The contemporary Thanksgiving menu is a far cry from what the Pilgrims and the Indians feasted on in 1621 to celebrate the colony's first successful corn harvest. This holiday is all about indulgence and abundance, so if you’re like most Americans, there will be the traditional feast of turkey, gravy, mashed potatoes, cranberries, assorted veggies, stuffing, and much more. And let’s not forget about dessert! Apple pie, pumpkin pie, pecan pie, and the many other assorted goodies that delight the senses but typically overwhelm our waistlines. Chef Steve Kovarcik, our resident chef and culinary instructor, wouldn’t deny us our favorite Thanksgiving foods, but he will offer some thoughts on how to make them lighter and cut a few calories painlessly. However, some Thanksgiving food traditions are just not meant to be tinkered with, so we’ll discuss and savor all those marvelous holiday indulgences as well.
