    Easy Sugar Cookies

    Star and Moon Cookies

    2/3 cup shortening
    1 1/2 cups granulated sugar
    2 large eggs
    2 teaspoons vanilla extract
    2 1/2 cups self-rising flour
    more flour
    colored sugar

    Cream shortening and sugar. Add eggs and beat the mixture thoroughly. Add vanilla. Add the flour; mix well. Chill.

    Preheat the oven to 400 degrees. Roll the dough thin on a lightly floured surface. Cut with lightly floured round and star-shaped cookie cutters. Sprinkle them with colored sugar.

    Bake on ungreased cookie sheets until done, about 5 minutes.

    These easy and delicious cookies never fail.  It is fun to share this recipe with a child who likes to cook.  What child does not enjoy working with dough and cookie cutters?
