Folks in Spain are still celebrating their team’s World Cup victory, but they still have to stop and eat once in a while. Chef Marc Vidal, of Solea restaurant in South Florida, has just returned from his native country and is having fun with its traditional flavors; in fact, Chef Gonzalo Rivera, of La Marea, is playing with his food, too. He’s blending ice-cream flavors the same way winemakers make their own special vintages. Call him an ice-cream sommelier; then dietitian Marisa Moore tells us how long foods can – and more important, can’t – sit in the refrigerator or freezer. It’s all about making sure that what you eat stays safe and nutritious.
