Today's show will again feature Jim Fish of Anasazi Fields Winery in Placitas, NM. In this portion we will hear Jim talk about the wine dinner he held at the winery on March 17, St. Patrick's Day. I'll also discuss oxidation in wine, what it is, how to minimize its effects and what techniques are employed to offset the early onset of oxidation. I'll also talk about wines that are deliberately oxidized and why.
The show features virtual tours of wine regions, with reviews of wines and restaurants I discover along the way. These include must-have wines and bargain wine recommendations. The format has a 10 minute interview with chefs that specialize in food & wine pairing, or with quality wine makers.
