This simple yet revolutionary idea was born after Allison Westfahl’s aunt was diagnosed with celiac disease, an autoimmune disorder characterized by an inability to digest foods containing gluten. Concerned by the fact that celiac is a hereditary disease, Allison decided to also try a gluten-free diet.
The results were powerful as she lost 15 pounds effortlessly. Eager to test her theory that gluten was sabotaging waistlines, Allison who is also a nationally renowned exercise physiologist and endurance sports coach encouraged her clients to try it. As her clients saw their waistlines shrink, she has now put together a diet plan and cookbook showcasing her discovery and easy to follow recipes.
