    Literary Eat Of The Week! Pecan Lace Cookies

    Here is your literary eat of the week! Enjoy it well!

    Pecan Lace Cookies
    10min Prep
    6min cook

    1 cup pecans
    2 tbsp unsalted butter, softend
    1 cup packed light brown sugar
    1 large egg
    1 tsp vanilla extract
    1/4 cup all purpose flour
    1/2 tsp baking powder
    1 pinch of salt
    melted bitter sweet chocolate ( enough to melt to dip your cookies in)

    1. Preheat oven to 350. Line your baking sheet with parchment paper.
    .2. In a food processor, finely chop your pecans.
    3. In a bowel with speed mixer on low, beat butter, brown sugar until well blended.
    4. Add your egg, vanilla, flour, baking soda, salt, beat until well blended.
    5. Stir in your pecans
    6. Spoon batter by heaping measuring teaspoonfuls on to prepared backing sheets. Spacing 3 inch apart.
    7. Back 6 min. Let cookies cool on baking sheet for 5 mins or until firm.
    8. Dip one edge of cookies into melted chocolate. Place on wax paper, let stand until set. Store in container.
