Quality oils and fats provide a concentrated source of energy. They provide the building blocks for a variety of hormones and hormone-like substances, are an essential part of our immune system, act as carriers for fat-soluble vitamins A, D, E & F, aid in the metabolism and utilization of other fats, and compose the structure of cell membranes. Every instruction your body needs to survive is communictated through your cell membranes. As part of a meal, fats delay the emptying of food from the stomach which provides longer satiety and more stable blood sugar.
