Jeffrey Keller, MD, FACEP, discusses the thorny issue of self-reported food allergies in the correctional setting. There are many misconceptions about what constitutes a food allergy. In addition, food preferences can be inappropriately identified as an allergy. How should correctional nurses sort out food allergies?
