    This came from a visitor to the show last week...She said she really enjoyed the show and returned to share!  How cool is that!  Sharing this Vegan recipe it looks great!
    Y'all enjoy!

    This vegan recipe can be made with many different variations.  Try using different nuts and different vegetable combinations.  To make pecan or sunflower meal, run pecans or sunflower seeds through the blender until very finely chopped.

    1/2 c. chopped celery
    2 small onions, chopped fine
    3/4 c. walnuts
    3/4 c. pecan or sunflower meal
    2 1/2 c. soy milk
    1 tsp. dried basil
    1 tsp. dried oregano

    3 c. bread crumbs
    Salt and pepper to taste

    Preheat oven to 350 degrees F.

     Lightly oil a loaf pan.  In a medium sized frying pan, saute the chopped celery and onion in 3 tsp. water until cooked.  In a large bowl combine the celery & onion with walnuts, pecan or sunflower meal, soy milk, basil, oregano, bread crumbs, salt and pepper; mix well.  Place mixture in prepared loaf pan.  Bake for 60 to 90 mins. or until the loaf is baked through.
