It really seems like cooking has leveled up lately, right? People are getting more creative in their kitchens—cooking outside the box, if you will. Sweet potato pancakes with coconut syrup. Crispy, deep-fried cauliflower bites. Quinoa and kale stuffed acorn squash. Flourless, sugarless, dairy-less chocolate cake that’ll make your mouth cry tears of joy—where do these recipes come from??? I don’t know or care, I’m just grateful to the peeps that create them.

You know why? Because I love to eat—duh.

Yes, of all the trends swirling around these days, I would have to say my favorite is that of the foodie. The gastro-gourmet, hybrid-fusion cuisine that’s all organic, or Paleo-friendly, or vegan, or made of nothing but twelve different cuts of bacon—bring it on, I say!
