    Recipe of the week

    Chicken Fajitas (recipe #1)

    • 2 lbs of boneless chickens breast or tenders
    • 1 cup of orange juice
    • 1 cup of pineapple juice
    • 1/2 cup tomato juice
    • 1/2 soy sauce
    • 1/4 cup of garlic or 3 tablespoons of garlic powder
    • 1/2 cup of cilantro
    • 1/4 cup of comino/cumin
    • 1 teaspoon cayenne pepper
    • 2 tablespoons of white pepper
    • 2 tablespoons of seasoning salt
    • 1/4 cup of cooking oil

    Rinse chicken quickly and cut breast into strips and/or take tenders and place in large bowl.

    Season with salt and pepper (black pepper is OK).

    Set oil aside and add the other ingredients to the seasoned chicken. Let marinate 45 minutes or more before grilling.

    On a hot grill take oil and brush across grate of the grill to prevent chicken from sticking and to get those beautiful grill marks.

    Place chicken fajita strips away from the center and cook about 5-7 minutes on each side or until done in center.

    Use leftover marinade to baste chicken fajitas while still on grill.

    Garnish with lime, lemon, or orange wedge and a sprig of cilantro.

    Serve with choice of tortillas, condiments, sides, and beverages
