Hello Everyone and Happy Easter (or Passover)- Today's episode was a fun one! I had a blast researching this week's topic.,,,the VICTORY Garden! As we get ready to plan/plot out our gardens, or just want to change things up and go for a new look...why not plant with a purpose, and plant items that serve multiple functions? They look great, and can provide food to help you cut down costs at the grocery store! The Victory Gardens became famous during World War II, when the govt urged people to plant food in ofer to help ease the burden on the nation's food supply during that difficult time. These gardens were called "Victory Gardens". While today's economy isn't near as bad as it was then, we are still watching our pennies and trying to save where and how we can. So-why not have our gardens serve a purpose? PLUS-you can impress your friends with the fresh herbs, tomatoes and/or fruits that you've grown! So, what can you plant? Vines that FRUIT: This is perfect for blank stretches of fence. You can place a lattice trellis at intervals for plants to grow on OR place the trellis in front of a window w/an offending view, or for privacy if you live in the city and don't want to block out light, but don't want to see in your neighbor's bedroom window either! Plant Red Flame Seedless or Thompson Seedless grapes, a vine called "Kiwis" can be planted. With the Kiwis vine, you need a Male and a Female vine to pollinate and produce fruit though. Sweet Peas and Snap beans are also good for trellis' and arches. If you only get morning sun, try planting Blueberries (yum!)
Pot Vegetables: Live in an apartment or condo? Have an expanse of space on your deck or patio that you want to liven up? Plant large pots with tomato plants. Use a topiary for the tomato plant to grow on. Plant basil, oregano, thyme and garlic around the tomato plant and you have all you need for great spaghetti sauce! In another pot, plant butter lettuce, romaine lettuce, radishes and cherry tomatoes for salad! Herbs can make excellent ground cover as well: lemon thyme, creeping thyme, chamomile and strawberries are perfect! (I've use chamomile as ground cover and it's wonderful).
Privacy Food: Back to the offending neighor...can't dig a moat and are looking for other ways to "block" the view? How about growing a privacy hedge that produces food? Bay Laurels and Pineapple Guava are perfect. They grow to 35 feet high (if you need something smaller, look for the dwarf version) and make a great evergreen screen.
Need Shade: Fruit trees are great shade trees and can also be planted in large pots (dwarf versions) for use on patios and decks. Cherry trees (which yield up to15 lbs of cherries a year!), Santa Rosa plum or apricot trees are great options. Peach, nectarine and apple trees can also be used. If space is limited, how about a Fruit Cocktail tree, which has several fruit trees grafted together to produce a variety of fruit. Again, check with your local garden center for availability.
Melon, anyone?: To grow a melon you need an area with full sun and the availability to make a mound 12" x 24". Place 2 melon plants (cantalope or watermelon) on top of the mounds and water daily for 2 weeks. Melons should be planted after the last frost. This will take up to 3 months for them to grow. ***Mixing coffee grounds or compost will be beneficial for the soil (get from Starbucks or other coffee shop as they package up used grounds and give away!).*** Other veggies that are easy to grow are: peas, peppers, onions, zucchini, beets, carrots and spinach! I'm really motivated and am going to plant a garden this year. I will post pictures on our Facebook group page as the garden grows! Let's see who gets the most food!! First off, I found a GREAT new sustainable program run by the University of MN called "EcoPalm" Program. This is a fair-trade program that enables farmers in Mexico and Guatemala to harvest palm fronds, that are used on Palm Sunday & Easter mass, in an eco-friendly way and be paid a fair wage. This also keeps the rainforest in tact as farming techniques are done in a sustainable way. Christians celebrate Easter as the observance of the death and rebirth of Jesus. Non-Christians, celebrated the Spring Equinox-which is on March 21st, as the demarcation of the end of Winter and start of Spring (i.e. death to birth). The patron of the Spring Equinox is "Eostar" with the holiday known as "Ostara". Easter is a derivation of that. The common threads of both are the theme of "death and rebirth". The symbolism of the EGG in Easter celebrations. The egg is a common fertility symbol, which is really what the holiday is honoring (fertility=birth). The coloring and/or dyeing of eggs is much more prevalent as a tradition, world-wide, this time of year. Eggs are colored, dyed, etched...whatever you can think of to decorate your egg and display it (and eat egg salad for 2 weeks afterward!). ***Eggs and equinoxes are linked via the folk legend that since the hours of light and dark are equal, it's possible to balance an egg on end. (try it and see if it works-although it s/b closer to the Spring Equinox...). *** Some great decorating ideas for Easter, and Spring in general, are:

Hungry? Meals that feature eggs (obviously), along with lighter texture breads (not a 7 grain, high fiber bread if you get my drift!), served with fresh baby greens and/or dandelion salad with some sprouts is perfect! Think of this for Easter breakfast/brunch. Want to start some more "spring rituals"? Get in the groove of planting a bulb/veggie garden. Start thinking about it now. Get those hands dirty and connect with Mother Nature. Repot a houseplant, visit a botanical garden (ours serves Easter Brunch!), plant an herb garden...spring clean (I know...I started yesterday). Air out the house, beat the dust out of the rugs, wash the windows, de-clutter...you'll feel so much better!
